What Does a Good Hospitality and Catering Training Session Look Like?

A well-structured, thoughtful and individualised training session can make a significant difference—not only to an apprentice’s knowledge and skills, but also to their confidence.

Recently, one of our tutors worked with Commis Chef apprentice who was feeling particularly nervous about his upcoming end-point assessment. Like many apprentices, the idea of speaking with unfamiliar assessors was daunting.

Together with support from the tutor, he carefully planned the timings for the cooking element of his assessment, breaking each task down into manageable steps. Throughout the session, the tutor also made a conscious effort to recognise strengths, particularly his cooking ability and the good practices he was already demonstrating. Focusing on what he was doing well helped reinforce his existing skills and significantly improved his confidence.

By the end of the session, feeling more prepared and reassured about completing his practical assessment. A good training session is not simply about delivering content. It is about listening, adapting teaching and resources, recognising strengths and creating a safe environment in which apprentices can grow.
